Defining "Taste" and "Flavor"

The dentist has a sweet confession to make.  I have a new food fascination!  I’m somewhat obsessed with the Nutty Cakes at the Sleepy Bee in Blue Ash.  The Nutty Cake magic formula includes generous buttermilk pancakes (there is also a gluten-free option) prepared with chocolate chips in the batter, topped with a streak of natural peanut butter, sliced banana and Ohio-made pure maple syrup.  If you do it just right you can distinctly taste the chocolate, the peanut butter, the banana and the maple syrup in each and every bite.  Both the flavor and taste are magical! 

     People tend to think of flavor and taste as synonymous terms.  But in actual fact taste is just one component of flavor.  The tongue is dotted in specific regions with neurologic taste receptors/buds that detect sweet, sour, savory, bitter and salt.  Flavor takes into account the texture, temperature, and odor of food in addition to its taste.  Imagine eating soup that has gone cold, an apple that is soft, or potato chips that are damp.  The taste might be fine, but the flavor would be all wrong. 

     If you like the taste of chocolate, peanut butter, banana and maple I promise you you’ll love the flavor of Nutty Cakes at the Sleepy Bee!
